This easy salad only takes a few minutes to make. It's perfect for camping because it is quick and the ingredients don't require refrigeration. It's a very traditional Israeli dish, served often. Make it a meal or a side dish.
Chop all of the tomatoes, cucumbers, and onion into small pieces. Place the chopped vegetables into a bowl.
Juice the lemon and add the lemon juice, olive oil, and salt and pepper to taste to the vegetables.
Combine well and serve.
For other options, you can add the following to this salad: bell pepper, yellow pepper, cilantro, green onions, feta cheese, thinly shredded lettuce or cabbage, kalamata or green olives, rice, tabouli, chopped pepperoni, avocado, couscous, quinoa, boiled eggs or tuna. Add it to sandwiches or bagels or serve as a side.
